How can I add the filler piece on the roof and still keep.the shape of the arc in the roof. Seems like the roof wants to sag in the middle...ideas?

Somehow you need to support the roof in the center to the level you want it to sit at...
I've personally setup both a jack to do it, and also a broom handle with a 2x4 scrap to support the roof skin across where I weld...
Probably also can use some butt weld clamps as well to hold the steel along with a support.

I'll try that, ill bend some metal to the curve I want and use wood to push it up and start welding in place, wish me luck

i think a strip of 1'' 1/8 metal will flex enough but will bend uniformly with the roof contour and give me the shape and support i want.
