Don't know about you but I seem to have better luck with Edelbrock carbs that Holleys. I don't race or anything but usually just buy a carb & slam it on. I've used both but Edelbrocks just seem to work better out of the box for me. Am I doing something wrong with Holleys?

You're not doing anything wrong, not if you're an out of the box user.
I'm a die hard Holley guy. Install one, tweak it for everyday driving and never touch it again.
 
I like the Summit carbs. Pretty much a copy of the Autolite carbs of the 60's, no gaskets below the fuel level. Usually right out of the box.
 
I'm also a Holley guy.

That said, I won't speak against any carburetor of good quality. Get to know your carb and how to make it better. An "out of the box" Edelbrock can be better than it is... so can a Holley, a Quadra-Jet or any other... they're all different in their designs, but infinitely adjustable within reason...

What (specifically) are your issues with Holleys?
