I have a bran new 6.5hp OHV engine in the box on the shelf. Might be a good candidate.. or a 600cc R6 motor.... oh the possibilities..... Also got a set of gokart slicks, and bearings, and hubs and a neighbor with a tube bender. Problem is I looked up what one of those 26x3.5 front wheels cost and holy crap does that suck.

Why would just any old street bike front tire and wheel work?

Those things are just the bomb!! Even my geriatric old self could get into that!!

I suppose that yeah that probably would work... Could even use one with brakes, and maybe even some slightly tweeked old bike forks.... I probably know where to find that stuff!!! This might make the project a heck of a lot cheaper for me and maybe even a little cooler with a fatter tire.
