What is the best way to determine the choice of bore size of the master cylinder that is to be used? Does it matter or is it the ol' bigger is better deal?

I don't think the "bigger is better" rule applies c-dog. I know in a drum/drum system one of the variable factors is the bore size of the wheel cylinders.

I'm no expert on this subject but I have read that you shouldn't go bigger than 1 inch on a manual brake system. Most master cylinders that I have seen range between 7/8" and 1 1/8".

I'm sure this was no help at all, lol.

This is a good reference to determining the proper M/C size for your system, from personal experience I would say the 7/8 bore M/C should do the trick, with your manual disc/drum. If the pedal is hard to push or feels solid with little pedal travel, then go smaller with the bore of the M/C, to increase brake pressure,also going smaller will increase pedal travel.
 
This might help you out, as the pedal ratio plays a big factor.
