Your pie cuts will need to come a long way forward, but it's a better idea. Make the slice, let it overlap temporarily. Then you can use screws to get it mocked up. Then do you final cut through both layers. Puts the right gap in for a butt weld.
If you make a plywood buck of the hood in cross section before you cut it, you can use it to maintain shape as you reform the hood. It will make reshaping easier. You could make a sheet metal one like I did for my roof. It didn't take me that long, but I have an old shear that made it easier.
