6 ft 3" 275 lb, I fit in my rat that was chopped 6" and channeld 6", the only mod I made was to have the clutch release very close to the floor so I did not have to bring my left knee up too high.

A 27 cab is tight to begin with.
 
About 8 years ago I traded into a vintage T-bucket. It had been built as a show car in the early 60s and had a lot of neat stuff but also was not drivable since the po kept the jag rear end. One day I went out and just sat in it and realized right away that I wasn't going to waste my time putting it back together. I completely lost any attraction to fiberglass T bucket cars right then and there.

I have asked ths same question before. My 1953/54 Chevy pickup truck sits on a z'ed frame but other than that the inside is all stock. I have been working inside on the floor pans and pedals and such for at least 2 monthes now and I have to tell you these old vehicles are tight tight tight...I am 5'7" tall and with a stock height cab and a pair of old aluminum stock car seats my agility is going to be challenged once I get it done.
I dont know how you guys chop tops and channel stuff and still feel comfortable driving these things. Some of these cars are stupid low...do you think they really drive them???
I know this is supposed to be a throw back to simpler times but how did the kids back in the 1950's and 1960's drive these old rust buckets???(and all us current day rat rod jockeys)

this dinky 27 of mine is tight.
but it is still more comfy than a motorbike...;)
really it feels a lot closer to an overpowered go-cart than a car.
i totally understand why folks trailer their rods.
(i wish i had one.)

Mike I think your problem might be those seats..can you post some pics of how they are positioned..I'm 6'2" and 260 and I fit great in my F1 cab..granted the cabs are fairly small, but with proper pedal,seat and column placement, theres no reason they have to be uncomfortable..
