I know you can have leaf springs re-arched. Does anyone know if coil springs can be re-sprung or whatever you'd call it.......re-coiled.

Depending what your putting them on it would probably be cheaper to just replace them with new in the dimensions you need. I know like in the 64-72 chevy trucks lots of options in aftermarket and several in just swapping out for car springs for lower and soft to 3/4 ton for taller and stiff.
