Simply put, it's when the floor is cut out and the body is lowered around the frame. The new floor is reinstalled at a higher elevation. It just makes your car lower. CR
 
The interior space is reduced by the same amount that the body is lowered over the frame.

The heavily channeled cars from back in the day were barely driveable.

Less channel and more suspension work makes for a more pleasant rod.
 
We rodders have gotten better at channeling a car these days. In the old days we used a torch to cut the subframe loose until the body dropped over the frame to the amount we wanted. We weren't exactly "neat" about it back then. Today's channel jobs are much cleaner and thought out.

Channel means just that, a channel, in this case 2 channels one at each door sill.
Providing there is no X-members through the center of the frame.

Cut only the width of the frame out of the floor and up the firewall on both sides of the car and lower car over frame, then box the floor and door sill around the rails. Depending on how low you want the car over the frame will dictate how big of a door sill you'll have to climb over to get in or out of the car..
