what about running on an 81 280zx frame with 5 speed inline 6?

My guess is those frames are really wimpy. Kinda like the g-body frames (80's Regals, etc.) they are seperate, but no too stout on their own. You might be able to use the front and rear clips, but you' probably need to seriously beef up or replace the rest.

How are your welding skills?

standard i guess -- i cant do any of the amazing fancy metal stuff ive seen on the site but i can weld together 2 pieces of metal with no worries lol.

im not against building a frame from scratch -- but what id like to know is -- if i can pick up some donor car for the engine trans etc. .. that has a perfectly fine frame -- it seems like it would sense to just work off of that?

for instance theres a guy with an 82 ford w/ a good running 460 4 speed nearby know that hes been thnkng of getting rid of .. just seems like a package deal ... no matter if i have to cut the frame up as far as other stuff im going to need...

That one you pictured has an IFS front end - probably on a S10 frame. Notice how the motor and radiator are way forward.

I have always thought the front wheels set too far back on open wheel S-10 framed rods. Just look at a lot of pictures and you will see a much better balance on a rod with the radiator no further forward than the front of the rims.
